Chewy Trail Mix Cookies

The special ingredient in these delicious cookies chewy trail mix cookies is soft margarine! A lot of it.

This recipe is one of my favorites. It’s an adaptation of a recipe that someone once gave me at a bar, on a napkin. When everyone else exchanges phone numbers on napkins, I get recipes. It’s the way to my heart.

You can mix and match the ingredients to make your favorite cookie! Switch out the type of chocolate chips, use your favorite nut, or your favorite dried fruit to create a combination that’s perfect for you.

The secret to keeping these cookies chewy is to bake at a low heat setting and remove them from the oven just as the edges start to turn the slightest golden color.

Best if eaten within 3 days, however, they store well in the freezer.

Chewy Trail mix cookies

Servings: 3 dozen

Ingredients

  • 1 egg
  • 1 cup soft margarine
  • 1 ¼ cup white sugar
  • 1 tsp vanilla
  • 1 ¼ cup flour
  • ½ tsp salt
  • 1 tsp cinnamon
  • ½ tsp baking soda
  • ½ tsp baking powder
  • 1 ½ cup large flake rolled oats
  • 1 cup desiccated coconut
  • 1 cup semi-sweet miniature chocolate chips
  • ¼ cup chopped walnuts (optional)
  • ¼ cup raisins or dried cranberries (optional)

Instructions

  • In a large bowl, mix together egg, margarine, sugar, and vanilla.
  • In a separate bowl, sift together flour, salt, cinnamon, baking soda, and baking powder. Add dry ingredients to large bowl in the previous step.
  • Add rolled oats, coconut, chocolate chips, and (optional) walnuts, and raisins. Mix well.
  • Roll into quarter size balls. Place on baking sheet.
  • Bake at 310° F for 15-17 minutes.
