Summer Fruit ‘n Feta Salad

 

What’s more delicious than a bowl of fruits?

Ice cream, of course.

But this isn’t an ice cream recipe.

This post has been sitting in my drafts for over a year. It contained notes about what I wanted to write about, all the health boosting benefits of fruits and why you should eat this salad.

But, I’ve come to realize that the only reason you ever need to eat anything, is because you want to. Because it tastes good. Anything beyond that reasoning comes with a side of guilt and a dash of stress. Here at Inside Nutrition, we aim to do better.

So, this is the beginning of recipe posts that are posted simply because they taste good. No fancy wording eluding to something being healthy or not healthy. No good foods or bad foods. No “eat in moderation” (because really, what is moderation anyway?)

Just food. No guilt.

(yes, it might be ironic that my first “guilt free” post is a salad. But that’s about to change. All foods fit.)

Summer Fruit 'n Feta Salad

This refreshing blend of sweet and salty is the perfect addition to your summer meals.

Ingredients

  • 250 grams Fresh strawberries
  • 3 tbsp white sugar
  • 1/2 mini watermelon
  • 1 cucumber
  • 125 grams fresh blueberries
  • 1 tbsp olive oil
  • Fresh mint too taste
  • Feta cheese too taste
  • Vegan: Sunflower seeds substitute for feta

Instructions

  • Wash all fruits
  • Chop strawberries into small mixing bowl and add sugar. Mix until sugar thoroughly coats the strawberries. Set aside (roughly 20 minutes). The sugar will draw the juice out of the strawberries.
  • Remove skin on watermelon and shop the inside fruit. Add to large mixing bowl.
  • Add blueberries, olive oil and mint into the large bowl with the watermelon.
  • Add strawberries to fruit mixture.
  • Serve and top with feta (or sunflower seeds).
